Beef Short Rib Recipe for the InstatPot

*See the starred notes on modifications for dutch oven or crock pot*

Adapted from Wholesum Yum

Ingredients:

  • 3 lbs (approx.) of bone in Snyder Family Farm Short Ribs

  • 2 tsp of salt

  • 1 tsp black pepper

  • 1 Tbsp of Beef Tallow or Butter

  • 1 cup beef broth (check out our blog post “No BONES About It” for a recipe on how to make your own broth!)

  • 6 cloves of Garlic- minced

  • 1/4 cup of Soy Sauce or Coconut Aminos

Directions:

  1. Pat Short ribs dry with paper towels and season generously with salt and pepper.

*If using a crock pot or dutch oven just heat a separate pan on stove top and use for Steps 2 through 4.

2. Set InstatPot to “Sauté” and once hot, melt the fat or butter in pot.

3. Next you will sear all 6 sides of each short ribs until browned. You will need to do them in batches as to not overcrowd and ensure a proper sear. Set aside after searing.

4. Add garlic to empty pot with any leftover fat/butter and sauté until fragrant, about 1 minute. Then turn “Sauté” function off.

5. Add beef broth and aminos (or soy sauce) to pot and scrape the bits of goodness loose that are no doubt stuck to the bottom of the pot (these are extra flavor nuggets of goodness!).

*If using a crock pot or dutch oven, you can pour enough broth into the pan on stove top to gather as much of the crumbly goodness as possible before transferring to the crock or dutch oven.

6. Now add all the short ribs to pot in one crowded layer.

*For crock pot or dutch oven, cook on low for 6 - 8 hrs.

7. Secure lid to pot, ensure valve up top is set to “Seal,” and press the “Meat/Stew” button ( or high pressure) for 40 minutes.

8. Use a “Natural Release” for 10 minutes once done and “Quick Release” any pressure after that.

9. Enjoy with a side of mashed potatoes/cauliflower or rice!
